 Rooibos is obtained from the leaves of the African rooibos which grows only in South Africa.  The leaves are oblong-shaped like long needles. They are harvested in summer according to the climate of Africa which means in January. The bushes are cut with sickles at the knee level so that the bush can grow freely and then it is wrapped in sheets. And after that, they are cut into smaller pieces. The cut dried material is taken to a concrete yard and embankments are made of 40 cm high and 1 meter wide. To release the aroma force must be used to break up the dried fruit.
