That's because Nintendo often releases game updates on the eve of the official release date (in North America anyway). Previous Animal Crossing: New horizons updates usually drop around 8 pm or shortly thereafter. Eastern Time / 5 pm PT the night before their official release date. 

If Nintendo sticks to the release schedule cadence, you should be able to download the Animal Crossing: New Horizons 2.0 update between 8 pm and 10 pm Eastern Time on Thursday, November 4th.
