What is Retortable pouch?

Heat Processing Methods
There are two main methods used for heat processing of retort packaged foods - batch processing and tunnel processing:
Batch Processing
In batch retorting, the loaded retort baskets or trays containing retort pouches are placed inside a retort vessel. Steam is then injected and temperature is raised gradually up to the required process temperature (115-135°C). Pressure is also maintained inside using a pressure lock. The temperature is held for the specified time (5-30 minutes) after which cooling water is sprayed to bring the temperature down rapidly. This process is done in batches.
Tunnel Processing
Tunnel retorts provide a continuous retorting process. Loaded carts are pushed through a continuous steam heated tunnel where products are exposed to specified time/temperature conditions without stopping. Temperature and time is precisely controlled to ensure commercial sterility. This method has higher throughput than batch processing.
Quality Control and Shelf Life Testing
Retort manufacturers perform extensive quality testing to ensure product safety and extended shelf life. Some key tests include:
- Seal integrity testing using water immersion or pressure testing
- Sterility testing - checking for no microbial growth after incubation
- Shelf life studies - assessing quality parameters like texture, flavor, microbiological counts at different intervals
- Challenge testing - exposing packaging to more harsh conditions than actual use
